Job Summary Under the direction of the Executive Director, with input from the Vice President of Nutrition and Dining Service, the Director of Dining Services (DDS) oversees all aspects of food service across the community, including Residential, Assisted Living, and Care Center/Health Services departments. The DDS establishes high performance standards for kitchen and dining staff, ensures attractive, nutritious meals, manages the purchasing of food and supplies within the budget, and guarantees compliance with dietetic standards and safety regulations. The DDS coordinates menu planning, special events, and diet counseling, while maintaining strong collaboration with medical and nursing staff and the community’s Corporate Office. Responsibilities (Essential Functions) Provide quality customer service to residents, families, co‑workers, and vendors. Direct department operations, delegate tasks, resolve operational problems, and manage employee grievances. Ensure that modified diets are followed and provide diet counseling for residents as needed. Purchase and oversee the preparation of quality food on a large scale, maintaining equipment and ensuring food safety. Conduct weekly meetings with the department management team, interview and hire staff, and maintain efficient staffing levels. Plan menus, cater special events and theme days, and coordinate with the Dining Services Management team. Integrate dietetic aspects of patient care through attendance at Resident Care Conferences and collaboration with medical & nursing staff. Act as liaison between the Care Center and the shared Dining Services, attending department head meetings. Ensure availability of modified diets and provide dietary counseling and prescription communication as an RD. Coordinate dining services in‑service training for all personnel. Maintain highest standards of cleanliness; comply with federal, state, and corporate policies and health codes. Perform all duties safely; wear required safety equipment and report hazards or accidents. Follow department safety standards, proper body mechanics, and participate in campus‑wide safety programs. Attend all mandatory in‑service meetings; comply with all departmental and facility policies. Understand and implement the facility’s fire and disaster plans during drills and emergencies. Manage subordinate supervisors per organizational policies and applicable laws; interview, hire, train, evaluate, and discipline staff. Qualifications Registered Dietitian (preferred) OR Certified Dietary Manager. Bachelor’s degree from a U.S. regionally accredited university in Foods and Nutrition or related field. Completion of a CDR‑accredited supervised internship program (for RD). Minimum 1 year experience as Director of Dining Services in a long‑term care facility. Minimum 1 year experience as a Dietitian in a long‑term care facility (if RD). Certification: ServSafe or equivalent required. General business, technical, and regulatory knowledge: reading periods, writing reports, presenting information, and applying basic math and geometry. Ability to calculate figures such as discounts, interest, commissions, proportions, percentages, and calorie counts. Knowledge of Title 22 California Code of Regulations (CCR) §72351(b) and other state‑approved training requirements for non‑RD DDS. Strong interpersonal and communication skills; effective presentation skills to managers and general public. Reasonable accommodations may be made for individuals with disabilities.
