1. Maintains the production kitchen operations to assure consistency with Collington's standards of high quality meal service.

2. Prepares menu items under the guidance of the Executive Chef, while following recipes.

3. Portions food according to production schedules and recipe specifications.

4. Follows safe food handling procedures with special attention given to critical control temperatures.

5. Understands classical cooking methods.

6. Complete understanding of proper knife cuts and handling.

7. Utilizes and maintains production records and temperature logs to aide in future production, purchasing and controlling expenditures.

8. Taste tests and evaluates food before serving to make sure standards are met, consults with Chef if there are any concerns.

9. Operates all kitchen equipment correctly.
