85&degree;C Bakery Cafe is seeking an R&D Drink Specialist for our Product Development team in Brea, California. Under the supervision of the Marketing Director, the Drink Specialist serves a broad range of functions, including but not limited to developing new products, conducting sensory testing, launching new beverage menu items, and maintaining a high quality menu with high quality ingredients. The R&D Technician works alongside the Marketing Drink Product Managers to assess emerging trends, consumer demand, and general beverage industry behavior.

The Drink Specialist is also responsible for maintaining a high standard for operating procedures within the drink bar area. Along with the support of the Regional Chefs, the Drink Specialist must train the trainers on drink procedures, equipment, tools, and workflow. As a result, the Drink Specialist must have a high degree of knowledge with everything involved within the drink category.

ESSENTIAL DUTIES AND RESPONSIBILITES:

• Lead and manage all aspects of new and existing drink development. This will include: formulations, labeling, specifications and regulatory compliance;
• Determine all the processes, specifications, and raw materials required to produce the highest quality for existing and new products;
• Evaluate formulations to ensure the highest quality is attained and cost reduction is achieved
• Establish a structured best practices approach for development from concept to consumer testing to final production;
• Collaborate closely with sales/marketing, manufacturing, finance and other cross functional entities in order to successfully launch and manage the implementation of new products;
• Conduct robust sampling within team and use output to refine recipes/products;
• Build, train and motivate a retail operation committed to timely new product introductions within budget with the highest standards of quality;
• Additional duties as assigned.

JOB REQUIREMENTS

• Bachelor in Food Science, or other related discipline is preferred
• 2 years experience working as a beverage R&D Technician or higher with experience in launching beverage menu items.
• Strong project management, problem solving and analytical skills
• Excellent communication skills required for internal meetings and customer presentations
• Ability to work with tight deadlines and meet new and changing demands
• Exceptional attendance and availability to work overtime when needed

• Maintain confidentiality of all work related information and materials
• Proficiency in oral and/or written Chinese/Mandarin a plus, but not required.
