Overview:

Cambridge Senior Living is a Skilled Assisted Living Facility located in Eau Claire, Rice Lake and Hudson WI  We are so excited to be expanding our Culinary Staff and are looking for a Culinary Director to join our team to help oversee our Rice Lake and Eau Claire locations This position is responsible for overseeing the day-to-day operations of the Culinary Department and ensuring the highest quality of food products are provided, all while supervising culinary staff and meeting financial expectations of the department with assistance from the Administrator and Administrative Assistant-Customer Care Specialist. This position will also assist culinary staff in preparing meals that meet the nutritional needs of the facility residents in a safe, resident-focused, and professional manner. Customer service is a MUST and an emphasis on made-from-scratch and fresh-baked goods is preferred. Please note that this position will require regular travel to our Rice Lake and our Eau Claire Facility.  If this sounds like you, we can't wait to meet you


Job Description: 

• Creating and delivering an exceptional menu and a full-service, white tablecloth dining experience
for Cambridge residents and guests.
• Developing recipes and portion specifications in accordance with the resident tastes, nutritional
needs, product specifications, ease of preparation, and established procedures and budgetary
constraints.
• Developing well-balanced menus in collaboration with Sous Chefs and Dietitians and utilizing
resident feedback to meet the dietary needs of the residents.
• Directing and designing plating presentation techniques for all dishes with the Assistant Chefs.
• Using imagination and talent when developing recipes and specials for the week to meet the
resident needs.
• Preparing and cooking/baking family style meals and snacks from scratch and beverages for
residents and sometimes employees and family members in a safe, efficient, and timely manner
according to the posted menus that meet special dietary or nutritional restrictions, and number of
portions to be served.
• Overseeing and assisting with setup, preparation, baking, cooking, dining service experience, and
cleanup of food production.
• Utilizing proper food handling and food safety techniques according to established policies and
procedures.
• Testing prepared foods to determine quality and palatability.
• Demonstrating the proper operation of all equipment to culinary staff according to proper
procedures and testing equipment per requirements to ensure accuracy of temperature gauges,
heating or cooling elements, etc.
• Making sure that there is soft music playing throughout the Bistros and Community Room during
mealtimes to ensure a comfortable, relaxed eating environment.
• Working in a clean, sanitary, safe, and organized manner, abiding by all health and safety
regulations.
• Communicating with Administrator on purchasing all food and non-food items required for weekly
menus and emergency supply, labeling them in accordance with DHS 83 regulations to assure First
In First Out rule applies and maintaining overall food and labor costs within budgetary guidelines.
• Meeting with Administrator monthly to review budget.
• Representing the community during any health department or other required inspections; ensuring
compliance and following-up with any deficiencies to ensure compliance is met immediately.
• Maintaining all department logs according to DHS 83 regulations as well as community policies and
procedures.
• Keeping an accurate, comprehensive assessment of the resident's dietary needs.
• Responding promptly and working to resolve resident concerns and complaints.
• Assisting fellow team members in maintaining a clean, homelike environment that is free from
hazards by tidying up spaces, cleaning up after residents and ensuring that they always look
presentable.
• Reviewing Resident Diet Type in electronic medical record.
• Maintaining confidentiality of all resident care information and ensuring that the culinary staff is
knowledgeable on the resident’s rights and nutritional needs.
• Completing proper documentation in electronic medical record.
• Hiring, evaluating, disciplining, and terminating, but also motivating the culinary staff in accordance
with community policies and procedures.
• Together with the Administrator, scheduling all culinary personnel to maintain compliance with
budgetary guidelines.
• Directly supervising and training culinary staff on all related culinary activities and providing
continuing education of foods and ingredients by conducting department meetings and hands-on
training.
• Showing up for work on time and following the appropriate call-in procedure when necessary.
• Maintaining a high standard and professional dress attire.
• Participating in administrative meetings, Care Conferences, QSTR, and other gatherings as deemed
necessary.
• Attending all mandatory staff in-services.
• Following rules and regulations outlined in DHS 83 and CSL Policies and Procedures that are not
specifically outlined above.


Qualifications: 

• High School Diploma or GED.
• Culinary degree preferred.
• 2+ years’ experience of commercial kitchen cooking and supervisory experience.
• Culinary school training and experience working in retirement community preferred.
• Current ServSafe certification or related food handling or ability to obtain.
• Must be at least 18 years old.
• CBRF Registry, CPR/AED certified, and Alzheimer’s/Dementia care experience preferred, but not
required.
