Essential Functions:

  • Responsible for leading all departmental functions including: hiring, training, product quality, recipe adherence, service execution/development, scheduling, menu/recipe development, process/procedure development, and product/equipment/supplies selection and install.
  • Work through F&B leaders to ensure all steps of service, product preparation and F&B standards are followed
  • Champion food & beverage quality and consistency through ordering, recipe adherence, production controls, product usage, sanitation and team member/leadership training
  • Responsible for the effective use of waste management program in all areas
  • Utilize property and company, training and development tools.
  • Use and champion property and company systems and product management tools (order guides, prep lists, recipes, waste logs, sanitation audits, shift checklists, etc)
  • Develop food promotions and events within each restaurant
  • Work with finance to establish a budget for revenues and expenses and operate within those guidelines.
  • Sets operational goals, budgets and business plans, and monitors achievement of performance and profit objectives.
  • Develops short and long range plans (revenue, expense, capital, promotional service) in all Food & Beverage areas.
  • Develops strategies and lead initiatives to continuously improve guest service and customer service scores.
  • Ensures inventory and cost control systems and procedures are in place.
  • Ensure regular sanitation inspections are executed and implement/maintain a team member sanitation training program
  • Maximize employee’s morale through leading by example in demonstrating beyond the best behaviors to both guest and employees and provides the tools, guidance and support needed to enable all restaurant employees to give world class guest service.
  • Ensure that all team members have the tools to effectively do their jobs and that they are in good repair
  • Creates initiatives to improve the team member experience and team member engagement ratings.
  • Sets performance expectations and provides coaching, career development planning and operational support for all direct reports.
  • Meets individually with direct reports regularly to discuss career goals, identify skills needed to achieve goals and from those discussions, creates meaningful development plans to strengthen talent and expertise.
  • Establishes procedures to uphold strict adherence to federal, state and city regulations and internal controls related to departmental processes.
  • Develops strategies to ensure the F&B area of the business is offering great product, pricing and merchandising to be best in market and consistent with the JACK Entertainment brand.
  • Supports F&B leadership to ensure staff is scheduled properly and aligned with business volumes.
  • Provides legendary leadership to all F&B team members.
  • Develops a strong working relationship with all department leaders to ensure unity and consistent direction.
  • Provides outstanding service when interacting with our guests.
  • Serves in the spirit of a servant leader.
  • Consistently demonstrate legendary leadership, influence, drive, innovation and commercial awareness.
  • Establishes and endorses the business objectives, ethics and values of the Company in accordance with the JACK Entertainment Code of Conduct.

Knowledge, Skills & Abilities:

  • Must be able to work independently.
  • Must be able to sit, stand or walk for long periods of time (4 hours).
  • Must be able to respond calmly and make rational decisions when handling team member conflicts.
  • Must be able to maneuver throughout all areas of the property and from floor to floor either by stairways (minimum of 20 steps) or escalator.
  • Must be able to lift and carry up to 50 lbs.; and, have the ability to push, pull, reach, bend, twist, stoop and kneel.
  • Respond to visual and aural cues.
  • Must have the manual dexterity to operate a computer and other necessary office equipment.
  • Must be able to tolerate areas containing dust, loud noises and bright lights.
  • Must be able to work varied shifts, weekends and holidays as needed.
  • Ability to simultaneously manage several projects, and not be frustrated by changing priorities and unforeseen obstacles to achieving objectives.
  • Ability to speak distinctly and persuasively.
  • Must be able to read, write, speak, and understand English

Education and Experience:

  • 6 years experience in Food and Beverage Operations
  • Strong, culinary, hospitality, administrative, and financial acumen skills
  • College education or equivalent experience
  • SERV Safe Manager Certification
  • Must possess strong managerial, coaching and leadership skills
  • Demonstrated ability to communicate effectively, in both verbal and written form
  • Demonstrated ability to deal effectively with team members at all levels
  • Strong organizational and analytical skills
  • Computer literacy
  • Ability to handle complex and emotional issues
  • Acts as a role model to other team members and always leads by example
  • Adheres to all regulatory, company and department policies and procedures
  • Must project professionalism and possess excellent verbal and written communication skills
  • Professional appearance
  • Team player
  • Must be 21 years of age.

Required Certification/License:

  • Ability to obtain a Gaming Occupational License within the State of Ohio
