EXECUTIVE CHEF

Mercy Ridge, an unparalleled retirement community located in Timonium, Maryland is currently seeking an Executive Chef to lead and strengthen our culinary team. This is an outstanding career opportunity for a hands-on chef to direct the culinary team in the preparation of 700+ meals per day in a multi-unit upscale operation. Candidate should have several years of restaurant experience.

POSITION RESPONSIBILITIES:

· Enthusiastically leads, supports, and manages the culinary team in striving to create an unparalleled culinary experience for our 550 residents and outside guests

· Provide daily direction to culinary team including hiring, performance management and scheduling

· Maintain proper purchasing and receiving records

· Maintain food production records and documentation of food temperatures for all dining venues

· Ensure optimum food quality and food presentation

· Maintain recipe database and develop seasonal menus for all dining venues

· Manage food, supply and labor expenses within established budget

· Ensure proper kitchen sanitation and maintenance of kitchen equipment

· Maintain high sanitation standards and comply with all regulations pertaining to safe food handling (County Health Dept., HACCP, and State regulations)

· Present and accessible in dining venues and kitchen during peak production and service times to gauge quality, welcome feedback and provide direction and support to team

· Develop a good rapport with residents through dining room visits and dining committee meetings

· Provide leadership, training, and career development for multicultural culinary staff

QUALIFICATIONS:

· Associates or Bachelors Degree from a culinary institute or equivalent required

· ServSafe certified

· Minimum 5-7 years proven track record in an Executive Chef or management role

· Ability to supervise, mentor and develop staff of 20 employees

· Creative skills in food preparation and presentation, attention to detail

· Excellent communication, organization, people skills, and team building skills

· Proficient computer skills: Microsoft Office programs, culinary production software

· Passionate about food
