Position Summary: The Pastry Chef is responsible for overseeing the preparation, creation, and plating of desserts, breads, pastas, ice creams, and sorbets. The Pastry Chef is responsible for the overall management, development and training of the pastry department and ensures that all government health regulations, industry safety standards and company policies are followed.


Daily Responsibilities:

  • Ensure all prep lists are followed.
  • Handle all food items and follow Department of Health guidelines for potentially hazard food items.
  • Maintain professional appearance standard as set forth in the Company Handbook.
  • Ensures all pastry dishes are prepared and presented to the highest standard.
  • Ensures all pasta is prepared correctly and by recipe specifications.
  • Order all pastry ingredients and supplies.
  • Staffing, recruiting, training and development of all pastry department staff.
  • Creating a dessert menu that is in line with the Gravitas concept, in conjunction with the Executive Chef.
  • Rotate all prep stock and properly label and date all products, ensuring FIFO and Company standards are met.
  • Communicate all product needs to Chef team.
  • Report damaged or defective equipment to management.


Requirements:

Physical Requirements:

  • Must be able to stand, walk, lift, and bend for extended periods of time.
  • Must be able to bend and lift up to 40 lbs.
  • Role may include job duties or tasks requiring repetitive motions.
  • Exposure to hot kitchen elements or cleaning materials.

Skills/Experience:

  • 2+ years of experience as a Pastry Chef.
  • Ability to work evenings, weekends, and holidays, as needed.
  • Must have valid, non-expired Food Handlers’ card.
