Department Summary

At Kripalu, the Dining & Food Service team is a diverse group focused on providing an exceptional retreat dining experience through the practice of sacred hospitality and preparation of a globally inspired, whole foods cuisine.

Position Summary

The Sous Chef is responsible for maintaining efficient meal execution, oversight kitchen staff and all products related to meal production.

The schedule for the role is

  • Wednesday - Sunday
  • 11:00 AM - 7:30 AM

ACCOUNTABILITIES

  • Responsible for proper execution of assigned meal.
  • Reviews assigned menus, recipes, and recipe labels to ensure accuracy
  • Manages cooks and prep cooks during production of assigned meals
  • Works with Cook’s Team to ensure staff members are well supported
  • Coordinates with Bakery and Servers for execution of dietary requests
  • Communicates and directs staff to make any ingredients substitutes
  • Performs periodic checks to ensure assistant cooks are properly executing meals and recipes, adjusts and provides retraining if necessary
  • Maintains high standards of food quality and follows recognized SERV Safe guidelines for time and temperature control
  • Maintains high standards of personal hygiene by wearing proper uniform, and abiding common protocols set forth by DFS and Health Code
  • Controls food and supply inventory, including completing physical inventory as required, dates and rotates stock and follows FIFO method
  • Promotes a positive food service image and good customer relations.
  • Performs other duties as assigned by management

SKILLS AND EXPERIENCE

  • 2-3 years of experience in a cook’s role
  • Experience supervising and training staff members
  • Ability to convert recipes and ingredient quantities
  • Basic knowledge of the principles of large quantity food production
  • Ability to operate all types of food service equipment
  • Ability to accurately count, record, and maintain inventory and production records
  • SERV Safe Certification and Allergen Training

QUALIFICATIONS

  • High School diploma or equivalent
  • Positive attitude
  • Must be able to stand for long periods of time and frequently lift 50 lbs.
  • Reliable transportation
