A popular casual dining restaurant in Lancaster County - Casey Jones' Restaurant at Paradise Station - has an opening for a Head Chef / Kitchen Manager.

This individual will be responsible for:

  • Training and managing kitchen personnel
  • Supervision of all related culinary activities
  • Estimate food consumption and purchase food from approved vendors
  • Standardize production recipes to ensure consistent quality
  • Establish presentation technique and quality standards
  • Plan and price menus while maintaining existing menus
  • Ensure proper equipment operation/maintenance
  • Ensure proper safety and sanitation in kitchen

The Head Chef / Kitchen Manager will function as a cook and expediter in addition to managing the kitchen, which includes hiring, discipline, performance reviews and initiating pay increases.

6 days/ week in-season, 5 days/ week off-season. Option for Sundays off if important for religious reasons.

Experience: Minimum 5 years of experience as a back-of-house manager in a casual, fast casual or fine dining environment. Must have experience with controlling food and labor costs, team development, recruitment and retention of "seasoned" and "green" culinary talent, menu development, and pricing and development of culinary team preferred.

Education: The ideal candidate will possess a bachelor's degree or related culinary degree with five or more years of industry and culinary management experience. Current ServSafe Manager certification required.
