Come join a fun team with a fun culture while working in the beautiful Jersey Shore environment The all-new Madison Resort Wildwood Crest, formerly known as the Oceanview Motel is a beach front property that was built in 1964, and at the time was the largest motel ever built in The Wildwoods. Recently purchased by Madison Resorts, this property is currently under full restoration construction with plans of softly opening in April of 2024.


The property will consist of a hotel, which will boast over 200 hotel rooms, 1-2 restaurants, multiple pools, and of course beach service with much more to come in the future years.


Summary:

This seasonal Chef position will be a 6-month position and is accountable for overall success of the daily kitchen operations in a new restaurant concept. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Works to continually improve guest and team member satisfaction while maximizing financial performance in all areas of responsibility. Supervises all kitchen areas to ensure a consistent, high-quality product is produced. Responsible for guiding and developing staff including direct reports. Must ensure sanitation and food standards are achieved. Areas of responsibility comprise overseeing all food preparation areas.


Responsibilities:

  • Know, understand, and adhere to company established policies and procedures.
  • Ensures guest interactions are always positive. Smiles with every guest.
  • Monitors and documents daily food inventories to minimize food waste, yielding resources to work towards proper food costs.
  • Maintains all Health and Sanitation standards as directed by local and federal health departments.
  • Plans, executes, and / or supports special promotions and events for the restaurants.
  • Develop in conjunction with the F&B Manager a new image for all aspects of F&B departments concentrating on menus and restaurant and banqueting ambiance.
  • Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
  • Manages food and labor costs established by the corporation and ensures they are maintained.
  • Demonstrate new cooking techniques and equipment to staff.
  • Maintain a recipe manual with pictures, for all menus.
  • Training of back-of-the-house kitchen staff with a customer service attitude.
  • Responsible for cleanliness, sanitation, and overall safety of kitchens within the Resort.
  • Responsible for overall food quality and image of all Resort functions concentrating on food presentations.
  • Responsible for food at Resort special events.
  • Develop new products and menus in concert with respective restaurant chefs and F&B manager.
  • Manage all Resort restaurants chefs.
  • Reviewing and approving employee timecards.
  • Interacts with guests to obtain feedback on product quality and service levels.
  • Set menu prices in accordance with corporate accounting guidelines.
  • Hire, train, manage, and develop employees within responsible areas.
  • Performs other related duties as assigned.
Requirements:
  • Two-year Culinary degree preferred
  • 6+ years' experience in an executive kitchen position preferred
  • Must have experience in high volume hotel business.
  • Must be competent in culinary creativity
  • With strong knowledge of food cost and inventories.
  • Must possess the ability to handle stressful and busy property.
  • Must have a good understanding of cost control.
  • Candidate must be a leader and a mentor.
