Oak Ridge Country Club in Hopkins, MN is seeking a full-time AM Sous Chef to lead our morning culinary team. The AM Sous Chef would be responsible for supervising food production personnel, assist with food production tasks as needed to adhere to consistent standards.

Job description

  • A.     Prepares or directly supervises kitchen staff for the daily preparation of soups, sauces, and specials to ensure the methods of cooking, garnishing, and portion sizes are prescribed by standard recipes.

    B.      Assisting the Executive chef with Inventories, pricing cost controls, and menu development.

    C.      Shares or assumes complete charge of the kitchen in the absence of the chef.

    D.      Consistently maintains standards of quality, cost, eye appeal, and flavor of foods.

    E.      Ensures proper staffing for maximum productivity and high standards of quality.  Controls food and payroll costs.

    F.     Make recommendations for maintenance, repair and upkeep of kitchen and equipment.

    G.     Personally works in stations assigned by Executive chef.

    H      Consults with front of house personnel and management about banquets, specials, and concerns.

    I.       Assists in maintaining security of kitchen including equipment, food, supplies, and employees.

    J.     Assists in food procurement. Building requisition sheet based on supply needs and prep schedules

    K.      Directly in charge of receiving all food products and supplies. Delivery, storage, Rotation and issuing of food items. Daily checks on labeling of all product.

    L.    Expedites food orders and banquet production.

    M.     Supervises, trains, and evaluates kitchen personnel.

    N.     Checks daily mise en place before service time and inspects presentation of food items stations to ensure that the quality standards are met.

    O.      Reports all member/ guest complaints to the Chef and assists in resolving complaints.

    P.     Submits ideas for future goals, operational improvements, and personnel management to the executive chef.
