POSITION SUMMARY: The Dining Room Manager will be required to facilitate and oversee the Main Inn Dining Room, Mahogany Lounge, and events hosted in the Stoneroom. The Dining Room Manager must have the ability to prioritize work, coordinate multiple projects, keep accurate records, and work with minimal supervision. The Dining Room Manager is expected to interact and communicate in a positive manner with other departments to ensure 100% guest satisfaction. To ensure and maintain the highest standards of quality, the Dining Room is expected to be organized and well maintained. The Dining Room staff is expected to be well groomed and productive.

JOB RESPONSIBILITIES:

Staff

  • Ensures proper level of staff to fulfill business needs and minimize overtime.
  • Communicates to the HR office expected needs for additional staff in a timely manner.
  • Interviews potential candidates for vacant positions and communicates decisions to the HR office.
  • Produces and posts a bi-weekly schedule for the wait staff, hostesses, bussers and bartenders at least a week before the start of a new schedule.
  • Uses good judgment to control labor and keep staff productive.
  • Reviews bi-weekly timecards, makes necessary corrections, and initials to indicate accuracy for the Payroll Dept.
  • Promotes a TEAM oriented atmosphere among the Dining Room staff, kitchen staff and Front Desk staff.
  • Maintains a positive attitude to ensure high levels of morale.
  • Schedules and conducts monthly staff meetings.

Training

  • Designs and provides necessary training to all new and existing staff on a timely basis.
  • Keeps abreast of all new company procedures and policies and relay to staff.
  • Holds Certified Trainers accountable for following the training guidelines with new hires.
  • Reviews all training material and tests to ensure new hires have been satisfactorily trained and knowledgeable to Stroudsmoor Country Inn standards.
  • Forwards all completed training material to HR.
  • Updates and distributes all training material to wait staff, hostesses, bussers and bartenders.
  • Develops a TEAM to deliver 100% guest satisfaction.
  • Researches and submits various educational materials for continuous training i.e., Suggestive Selling, Sanitation and Alcohol Awareness.
  • Initiates policies to reduce food/liquor waste, utility costs and breakage.

Communication

  • Fosters a culture where employees focus on their tasks and minimize department gossip.
  • Develops and maintains positive communication between departments.
  • Effectively communicates necessary information to kitchen staff and various departments.
  • Ability to communicate in a concise manner both verbally and written.
  • Responds respectfully and professionally to staff and guests.
  • Delegates responsibilities and work assignments to staff in a positive manner.
  • The Dining Room Manager must be a positive role model at all times. This requires being respectful to all guests and staff. The use of profanity and other derogatory remarks are strictly prohibited. Negative comments relating to the employer and/or the Stroudsmoor Country Inn property will not be tolerated.

Uniforms and Personal Hygiene

  • Routinely inspects staff for clean, complete and proper uniforms.
  • Ensures staff hygiene and grooming is acceptable.

Administrative Duties

  • Ensures all staff members are compliant with the employee handbook.
  • Updates computers for correct prices, new specials, menu changes to include bar items.
  • Responsible for shift reports.
  • Prepares gratuities worksheet weekly.
  • Submits weekly tip submission to KVS.
  • Ensures contracts are executed according to instructions.
  • Assists Front Desk staff in answering Dining Room phone line.
  • Take reservations for small groups. Refers private parties to the Event Office.
  • Check reservations for confirmation status and correct seating.
  • Assists in the annual review process of staff in conjunction with HR.
  • Assists in settling guest checks through POS system.
  • Assists in the preparation of Holiday reservations and confirmation.
  • Maintains proper inventory of small ware. Keep an organized supply closet of small ware.
  • Communicates all small ware needs to Executive Chef.
  • Meets weekly with Banquet Manager to review upcoming reservations.
  • Actively attends monthly Safety Committee meetings and weekly Manager’s meeting.

Sales and Marketing

  • Creates and executes incentive programs for staff to increase sales.
  • Researches and develops new ideas to increase dining room sales and liquor sales.
  • Maintains proper level of all marketing material that is distributed through the dining room.
  • Achieves budgeted revenue and expense goals.

Equipment, Safety and Cleanliness

  • Maintains a good understanding of assigned equipment.
  • Submits repair reports to maintenance as needed.
  • Maintains 100% cleanliness of dining room and bar area.
  • Assists housekeeping in maintaining lobby area to guest satisfaction.
  • Ensures all safety procedures are being followed.
  • Maintains an understanding of security system and alarms.
  • Properly secures the building and ensures staff is complying with the opening/closing procedures.
  • Maintains compliance with the health inspections and recommendations from the Stroudsmoor Safety Committee.

REQUIREMENTS:

  • Proven work experience as a Restaurant Manager, Restaurant General Manager, Hospitality Manager or similar role
  • Proven customer service experience as a manager
  • Extensive food and beverage (F&B) knowledge, with ability to remember and recall ingredients and dishes to inform customers and wait staff
  • Familiarity with restaurant management software
  • Strong leadership, motivational and people skills
  • Acute financial management skills
  • Serve Safe certification required
  • BS degree in Business Administration; hospitality management or culinary schooling a plus

UNIFORM REQUIREMENTS:

  • Business professional attire-
  • Name tag
  • Non-skid comfortable dress shoes
  • Hair must be pulled back neatly and off shoulders and face

SCHEDULE REQUIREMENTS:

  • Minimum 48 hours per week.
  • Present during high volume/peak season and holidays.

PHYSICAL DEMANDS:

  • Stand, walk or run for long periods of time
