PROGRAM SUMMARY: The Los Angeles LGBT Center Culinary Arts Program reveals the power of food to unite our intergenerational campus while simultaneously helping members to start exciting new careers in the hospitality industry. A certified social enterprise, our culinary training program enrolls 100 students a year and produces over 450 daily meals for Center program members. We also operate the Center’s café, Liberation Coffee House, and provide event catering services.
JOB SUMMARY: The Cook works closely with the Executive Sous Chef to ensure the on-time production of meals. This position helps to support daily meal production while at the same time being a professional role model to our students. The cook brings a minimum of 2 years’ experience in high volume, fast paced restaurant or institutional foodservice operation. Effective communication skills are necessary to ensure the successful daily operation of the kitchen.
ESSENTIAL FUNCTIONS:
1) Work with the culinary team to execute food production, including setting up and breaking down their workstation, following written recipes, preparing ingredients to use in cooking, and executing proper cooking techniques;
2) Ensure the on-time production and service of meals, catering events and coffee shop/café food;
3) Work with management to complete food inventories and ordering;
4) Work with management to support students and follow culinary curriculum;
5) Maintain a learning environment that encourages students to ask questions and show respect for the teacher and fellow classmates;
6) Maintain the kitchen in a manner that is compliant with State health and safety standards including the use of proper cooking logs and kitchen maintenance cleaning supplies;
7) Ensure that all health and safety codes are under compliance, and implement procedures to safeguard proper compliance (this includes cleaning logs, temperature logs, and corrective action documentation);
8) Stewarding and dishwashing tasks to maintain kitchen cleanliness, including items such as general surfaces (all kitchen surfaces including floors, walls, and stainless-steel hoods/surfaces), drain maintenance (drain covers and scrubbing drains), -cooking equipment (oven, range, flat-top, tilt skillet and deep fat fryer cleaning), storage/cooler (including walls, racks, storage bins, and cooling unit surfaces/vents), cleaning/maintenance of dishwashing equipment (including testing of sanitizing cycle and restocking of chemicals),
9) Work in a commercial kitchen environment which requires: standing in a stationary position or moving through the kitchen for the duration of your working shift, completing repetitive manual tasks such as cutting and dish washing, lifting items up to 20 pounds to a height of 4 feet, and exposure to extreme temperature variations due to hot cooking and dishwashing equipment and cold storage areas;
10) Participate in staff meetings, planning meetings and other meetings as needed;
11) Other duties as assigned;
JOB QUALIFICATIONS AND EXPERIENCE:
12) Knowledge of or experience working with the LGBTQ community and familiarity with issues of particular relevance to LGBTQ people;
13) A passion for the Center’s work and its mission to make the world a better place for LGBTQ people;
14) Must have Food Handler’s Permit or be able to pass the exam within 30 days after the date of hire;
15) Formal culinary training and/or nutritional training, a plus;
16) A minimum of 2 years of foodservice experience;
17) Background working in a high-volume, fast paced institutional facility, restaurant or hotel a plus;
18) Must be sensitive to the issues of young gay, lesbian, bisexual, transgender and questioning youth;
19) Good verbal and written communication skills;
20) Excellent time management skills and an ability to work with a sense of urgency;
21) Demonstrated ability to work effectively with people of diverse races, ethnicities, nationalities, sexual orientations, gender identities, gender expression, socio-economic backgrounds, religions, ages, English-speaking abilities, immigration status, and physical abilities in a multicultural environment.
