The Cook III is responsible for supporting the Executive Chef and Sous Chef in a busy kitchen delivering consistently high-quality food. Ensures the highest standards and consistent quality in the daily preparation and keeps up to date with the new products, recipes and preparation techniques.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Expertise to prepare all menu items across all property venues.
  • Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.
  • Manages food delivery check in for quality and quantity.
  • Ensure proper freezer and stock labeling and rotation on food items/ingredients.
  • Ensures all standardized recipes are utilized and followed.
  • Adhere to all food safety procedures and guidelines.
  • Opens shifts and prepares staff and venue for planned volumes.
  • Coordinates daily tasks with the Executive Chef/Sous Chef.
  • Covers off days for Executive Chef/Sous Chef.
  • Ensure effective communication between staff by maintaining a secure and friendly working environment.
  • Ability to produce own work in accordance with a deadline and to assist and encourage others in achieving this aim.
  • Guides and trains the kitchen team on a daily basis to ensure high motivation and economical working environment.
  • Follows the instructions and recommendations from the immediate superiors to complete the daily tasks.
  • Maintain and set sanitation, hygiene, and safety standards.
  • Enforce strict health and hygiene standards.
  • Execute the function of his/her area to exceed set standards and guest satisfaction.
  • Other duties as assigned.
  • May be responsible for cashier responsibilities, if assigned to a mobile/QSR outlet.

SUPERVISORY RESPONSIBILITIES

Indirect supervision of Kitchen team members and their activities.

EDUCATION and/or EXPERIENCE

  • High school diploma/GED required, Culinary degree preferred,
  • Previous work experience in a professional kitchen is a MUST
  • Five plus years of experience in food service environment preferred.
  • Must possess advanced knife skills, knowledge of all kitchen equipment usage, kitchen safety, and etiquette.
  • Must place an emphasis on a high level of guest service and give the best service possible
  • Minimum one (1) year in a supervisory role preferred

CERTIFICATES, LICENSES, REGISTRATIONS

  • Obtain necessary food handling / health department work cards as defined by local jurisdiction.
  • ServSafe Certification (preferred).
  • Valid Drivers’ License.
