The Food and Beverage Department is a team-oriented department focused on providing our guests with excellent customer service and a pleasurable dining experience.

The Food and Beverage Prep Cook plays a key role in supporting kitchen staff in the preparation of foods/ ingredients and maintaining an organized and clean workstation. Working as a team member and focusing on fulfilling required needs as communicated throughout the work shift are key roles for the Prep Cook.

Job Duties and Responsibilities

This job description is intended as a summary of the primary responsibilities and the qualifications for the position. Under the supervision of the Food & Beverage Manager, Supervisors, and/or other kitchen staff:

  • Completing all tasks in an orderly fashion on the prep lists from the Manager and/or Supervisors.
  • Preparation, stocking and labeling of all ingredients in prep fridges in kitchen and on the line before operations.
  • Preparation, stocking and labeling of all ingredients for grab n go and other venues before operations.
  • Understanding food prep needs during daily operations and clear communication of accomplishing those.
  • Communicating clearly and listening carefully to needs of the operation throughout the entirety of your shift.
  • Heating/warming prepared foods for hot service and keeping up with needs throughout operations.
  • Adhering to all relevant nutrition and food safety regulations and standards.
  • Keeping track of ingredient inventory and waste and collaborating with other kitchen and management staff to order resupply.
  • Keeping prep areas clean and sanitized, adhering to all Food Safety standards.
  • Being ever mindful of safety in the kitchen areas and proper equipment usage.
  • Assist in dishes, washing cooking utensils and cookware, and taking out the trash as needed.

Job Qualifications

  • Superior dexterity skills to operate cutting tools quickly and safely
  • Keen understanding of industry-standard best cooking and preparation practices
  • Familiarity with safe and sanitary food handling and preparation
  • Certified in proper food handling, we recommend the ServSafe Certification
  • Good math skills with a clear understanding of cooking measurements
  • Strong sense of smell and taste
  • Excellent organizational, time management, and multitasking skills
  • Ability to work independently, as well as collaborate and work as a team.
  • Effective communication skills
  • Ability to work in a fast-paced environment without being overwhelmed with the stress.

Work Schedules

Weather conditions and the number of guests play a significant role in the work scheduling of employees.

When conditions are normal, you may be expected to work 40 hours per week, including weekends and holidays. During busy periods, you may be expected to work 6 days a week.

You must arrange for transportation to work so that you arrive at your designated workstation at the scheduled time.

Working Conditions

At any time during the season, Dodge Ridge employees may have to perform their tasks in variable weather conditions, high winds, rain, snow, and extremely cold or warm temperatures.

F & B department is typically inside working directly with resort guests and other resort staff members. You may be expected to work in warm or cold places and often you will work around hot and cold objects. At times you may be asked to work the grill, or as a line server when needed.

Uniforms

A professional appearance at Dodge Ridge is required. Please always wear your nametag and uniform during your scheduled shift. We will supply most of the uniforms for you to do your job. However, you will have to supply some items as part of your job, as listed below. The quality, color, and style of the items must be approved by your manager before being worn to work. All hats worn must have the Dodge Ridge logo while on shift.
