Job Summary:

The Culinary Director is responsible for planning, organizing, preparing and service of meals and refreshments in collaboration with dietary team. Ensure adherence to State Standards and Casa de Rosa (CDR) Departmental Policies and Procedures.

Essential Functions of the Job:

  1. Follow recipes and menu cycles in collaboration with consulting dietitian that offer choice, address requests from residents and meet licensing guidelines for nutrition and portion size.

  2. Supervise the service of three meals a day, plus snacks for all residents.

  3. Develop, monitor and maintain quality standards for the storage, preparation and presentation of food. Routinely meets with ED's and the department heads and solicits residents' ideas and perspectives on the quality, variety and type of meals served in the Community. Adjusts menu to reflect needs and interests of residents as well as seasonal opportunities.

  4. Oversee the accurate and timely completion and filing of all required production records and other documentation required for food storage and handling.

  5. Prepare appropriate special diets to meet resident's needs. Prepares and coordinates food for special event and activities.

  6. Develop and implements a safety program to ensure proper working conditions and use of equipment. Trains staff in the use and management of equipment and supplies in the kitchen.

  7. Demonstrate an understanding of safety procedures and precautions regarding the resident. Reports all incidents, accidents, unsafe or hazardous conditions to appropriate personnel. Responds to emergency situations, following proper emergency protocol.

  8. SANITATION - Clean and maintain a sanitary work area; ensure compliance with state regulatory requirements

  9. CUSTOMER SERVICE - Provide and ensure quality service, resident satisfaction and compassion towards the elderly

  10. Provide supervision to the culinary department including hiring, training, and evaluation of kitchen and dining room staff.

  11. Good attendance.

  12. Perform other duties as assigned or needed.

Education and Experience:

  1. Associates Degree (food services related) strongly preferred.
  2. 2 years of experience in institutional food preparation and service and supervisory experience required.
  3. 1 Years of experience in an Assisted Living.
  4. Must have or be able to obtain Food Handlers within the first 90 days of employment. Knowledge and understanding of Universal Precautions and able to adhere to them.

Certifications, Licenses, and other Special Requirements:

Must have a current Tuberculosis skin test or chest x-ray. Must have compassion for and desire to work with the elderly.

Essential Skills:

Must have excellent interpersonal skills and ability to lead and motivate culinary staff team.

Physical Conditions:

Medium Work: Exerting 20 to 50 pounds of force occasionally, and/or 10 to 25 pounds of force frequently, and/or greater than negligible up to 10 pounds of force constantly to move objects. Physical Demand requirements are in excess of those for Light Work and are on your feet generally most of the day.
