ESSENTIAL JOB FUNCTIONS (includes but may not be limited to the following)
  • Prepare food daily as outlined on the weekly menu plan
  • Alter or adapt recipes to accommodate special dietary needs of residents or to improve recipes. Recipes should be prepared with little or no added sodium (salt)
  • Identify food and supplies needed for the next week’s menus and report to the Dietary Manager
  • Maintain a written inventory of dry goods, refrigerated and frozen foods, non-food supplies, dishes and utensils
  • Prepare meats for storage and portion control upon delivery; ensure proper storage of all delivered foods and ingredients
  • Maintain a clean, orderly and safe kitchen environment
  • Ensure proper handling, labeling and storage of food for infection control
  • Ensure compliance with regulations
  • Coordinate and participate in serving food
  • As needed, assist the Dietary Manager with menu planning
  • Monitor portion control to meet residents’ requests and minimize waste
  • Ensure attractive presentation of food on the plate before serving
  • Maintain an accurate record of chargeable meals (resident, guest and catered) and non-chargeable meals (resident, employee and marketing). Submit record to the office by the designated date each month
  • Notify the Dietary Manager of malfunction of equipment or appliances.
  • Provide input for resident assistance plans
  • Encourage and invite residents to participate in the food service program and activities
  • Train, supervise and assign work to the Prep Cooks and volunteers in the food service program in the absence of Dietary Manager
  • Ability to work weekends and holidays
  • Carry out other duties as assigned by the Dietary of Manager
KNOWLEDGE AND EXPERIENCE REQUIRED
  • Must have a passion for cooking and enjoy working with food
  • Must have compassion for and desire to work with the elderly
  • High volume, complex food service operations experience – a plus
  • Certificate or degree in food service preferred
  • Kosher meal preparation and knowledge – a plus
  • Verbal and written communication skills - ability to communicate effectively with residents, families, staff, vendors and the general public
  • Strong organizational skills
  • Ability to work well under pressure
  • Strong attention to detail
  • Must meet all health requirements, including TB, drug screening and level 2 background check

PHYSICAL DEMANDS

  • Lifting, pushing and pulling up to 35 pounds may be required
  • Bending, kneeling, stooping and squatting may be required
  • Walking and standing for extended period of time is required
