Job Description:

We are looking for a skilled Lead Cook to join our dynamic kitchen team in Kuhio, Honolulu. As a Lead Cook, you will play a crucial role in preparing and overseeing the daily kitchen operations. You will work closely with the Chef and Sous Chef to ensure high standards of food preparation and kitchen management.

Key Responsibilities:

  • Prepare a variety of food items including chopping, mixing, and creating sauces.
  • Cook food using various methods such as grilling, frying, and sautéing, following specific recipes and standards.
  • Ensure that all food items are prepared according to specifications, properly dated, packed, sealed, and labeled.
  • Supervise and delegate tasks to kitchen staff including cooks, prep cooks, and utility cooks.
  • Maintain a clean and safe kitchen environment by adhering to all safety policies and procedures.
  • Manage kitchen operations effectively in the absence of the Chef and Sous Chef.
  • Handle purveyor accounts and ensure timely procurement of kitchen supplies.

Qualifications:

  • High school diploma with some college education preferred or equivalent experience.
  • Previous management experience in a high-volume food service environment is required.
  • Proficiency in knife skills and various cooking techniques.
  • Must have recent TB Clearance or be willing to obtain one.
  • Strong adherence to company policies and guidelines.
