Job Description:

This role will serve as the Procedures & Testing SME for international. This person will provide direction for procedural development and testing as it relates to Restaurant menu, recipes, recipe items and such.

This role will draft product procedures as needed by converting recipes and methods into repeatable procedures suitable for mass duplication for international restaurants. This will involve working with Culinary & Commercialization to develop the procedures and validating procedural accuracy through testing and supplying recipe yield data to cross functional partners. This position will provide Training all the information needed to convert draft procedures into training materials and assist with evaluating procedures prior to translation. This person will serve as the Procedures & Testing SME on all international menu related project teams requiring organizational influence and having autonomy in decision making in order to maintain project deliverables and meet deadlines.

This individual will also be responsible for assisting with the development and management of food specifications with suppliers as needed. This includes working with Culinary & Commercialization, Supplier Quality & Safety and suppliers to develop specifications and maintain revision control.

This individual will lead Procedures & Testing procedural testing initiatives including resources and equipment needed as well as testing design, execution, and reporting.

This role is identified as a contractor role.

Role Responsibilities

  1. Serves as Procedures & Testing SME on all international menu related project teams

Provides input for project scopes

Participates in all project meetings

Influences project decision making

Communicates to the Menu Services team project status and needs

Ensures all Procedures & Testing tasks meet project timelines

  1. Leads procedural testing support:

Supports specification development internal testing as SME

Executes packaging design testing

Validates equipment design testing

Coordinates sensory testing

Documents all testing data

  1. Develops and improves product procedures:

Converts a culinary recipe into a repeatable industrial procedure suitable for mass duplication

Supplies cross functional partners with recipe yield data for cost control and nutrition.

Provides Operations with quality requirements for menu items

Documents all methods and keeps documents up-to-date

  1. Provide training department with all information needed to convert draft procedures into training materials of various formats:

Leads demonstrations and walk-throughs

Reviews and approves current procedures modified for international restaurants prior to translation to different languages.

Coordinates development of end product characteristics

Minimum Qualifications

Required years of experience At least 3 years of relevant work experience in R&D, quality, manufacturing, or food service

Required education Bachelors degree

Other required qualifications Proven track record of excellence in communication, leadership, problem solving, and analytical skills

In-depth project management experience

Proven ability to influence key stakeholders along the project decision track and across multiple areas of the organization

Ability to raise, manage, and mitigate project issues and risks

Proven success in multi-tasking and managing multiple projects simultaneously

Experience in supporting the work of multiple leaders

Proficiency in Microsoft Office and/or Apple computer software applications

Experience in designing and testing processes

CFA restaurant or restaurant experience is a plus

Preferred Qualifications

Preferred years of experience 5 years

Preferred education Bachelor of Food Science or other technical discipline

Other preferred qualifications Experience in food, analytical and/or microbiology laboratory

Training in statistical process control
