We are searching for candidates who are interested in building a career in the prestigious private club industry.The Director of Food & Beverage will curate and foster the inclusive and stylized culture that allows the team to consistently exceed member and guest experiences through an outstanding food and beverage operation. Execution needs to be articulate, poised, and personable. This individual is a true professional who can impart detailed knowledge of our menus, wines, and cocktail lists with staff and members alike.Responsibilities:Develops relationships with the members to personalize and anticipate service needsDisplay good associate development and mentorship skill, builds a team for the future and fosters growth.Maintains and fosters relationships with vendors and third party contractorsDevelops schedules that meet the demands of the Membership and within the budgeted labor expensesAssists in the completion of all month end inventories to include the kitchen, bars and suppliesAssists with budget development, cost analysis, and financial reportingAssists in the marketing of the private dining club, both internal and externalAssists in the managing of front-line associates cooks, stewards, food servers and bartendersManages service standards of the restaurant, banquets and barPromotes and implements all Troon food and beverage standards, procedures and policiesAssists and leads interviewing, hiring, training, planning, assigning, and directing work, evaluating performance, communicates opportunities, praise, progressive performance documentations of all food servers and bartenders; addressing complaints and resolving issuesManages department members that may include, but is not limited to: cooks, stewards, food servers and bartenders and any other food and beverage service personnelAssures that effective orientation and training are given to each new associateDevelops ongoing training programs and tests for comprehensionMonitors business volume forecast and plans accordingly in areas of labor, productivity, costs and other expensesIncorporates safe work practices in job performance51% of each day is dedicated to managerial and supervisory dutiesRegular and reliable attendancePerforms other duties as requiredJob Knowledge, Skill, and Ability Preferences:Ability to read and speak English may be required in order to perform the duties of the job (e.g. the associates may be required to communicate with English speaking customers or co-workers, the manuals for the equipment the associates may use are in English)Must meet state age requirements for handling alcoholic beveragesWorking knowledge of wine, spirits and regional cuisinesDemonstrates leadership ability with a focus on strong and effective communication with all associatesStrong problem analysis and problem resolution skillsStrong multi-tasking, organizational and time management skills to ensure a quick response to member and guest needsHigh level of active listening skills and strong member/guest service skills which includes the ability to resolve issues/complaints with tact and diplomacyStrong written and verbal communication skillsProfessional and courteous demeanorAbility to create high performance teams and to be a strong team playerDemonstrate a strong commitment to company valuesOrganizational development abilities with a strong focus on individual and team advancementComputer proficiency in Microsoft products such as Word, Excel, PowerPoint and Microsoft OutlookAbility to maintain effective financial accountability to the company and to the ownershipHave a comprehensive understanding of the physical infrastructure, food and beverage controls and financial back-office systems of a hospitality/food service environmentWorking knowledge of food and beverage service equipment and current trendsServe as a positive representation of the organization to Troon associates, members, guests, and vendorsEducation/Experience: Field-related education and 3-5 years of related experience and/or training; or equivalent combination of education and experiencePhysical Demands: Frequently stands, sits, walks, tastes, smells, talks, hears, uses hands, and reaches with hands and arms. Occasionally sits, climbs, balances, stoops, kneels, crawls or crouches.
