Summary

This position is located in the Allied Health Service Line at the Tomah VA Medical Center in Tomah, Wisconsin. The WG-4 Cook performs work involved in the preparation of regular and special diet foods and meals.

Duties

Duties Include, but are not limited to the following:

Perform a full range of simple cooking which entails the preparation and cooking of meals that require little or no processing. Follow menus, production sheets and recipes to prepare items in the quantity needed. Perform full range of simple cooking by preparing and cooking items that require little to no processing such as hot cereals, concentrated or dehydrated soups, sauces, and gravies. Grill eggs, hamburgers, meat patties, pancakes, French toast; broils meats; makes cold sandwich fillings and assembles a variety of sandwiches. Prepare fresh, canned, and frozen vegetables; bakes frozen potatoes, pre-made cookie dough, and muffin batters. Prepare and heats convenience items such as frozen hash browns, fish fillets, and chicken nuggets; prepare pureed foods and adjust consistency with thickeners. Wash, peel, chop, grind, pare, cut, slice, dice, puree, dredge, flour, and breads items. Weigh, measure, and assemble ingredients for regular and modified diets. Follow sanitary food handling procedures; cover, label and date food items; and utilize or discard ingredients by expiration date. Disassemble and assemble component parts and accessories for cleaning. Clean, store and maintain all kitchen utensils, equipment and work areas practicing a "clean as you go" concept. Clean and sanitize assigned work areas: worktables, sinks, blast chillers, racks, and carts. Maintain accurate food inventories. Maintain strict security of all areas. Work Schedule: Full-Time, Monday - Friday 5:30am-2:00pm, alternation weekends and holidays

Physical Requirements : Incumbent is subject to continuous standing and walking, and frequent stooping, reaching, pushing, pulling, lifting items such as pans of meat, cases of canned food or sacks of vegetables, and bending. They are required to perform heavy work, such as cleaning large-size cooking equipment and utensils; pushing food carts and hand trucks; loading, unloading and storing subsistence and supply items. Frequently lifts or moves objects within 40 pounds unassisted. Occasionally lifts objects weighing over 40 pounds with the assistance of other workers. Occasionally work on ladders and use power-cleaning equipment.
Working Conditions: Incumbent will perform work in areas of extreme temperatures. Work is performed in kitchen/dish areas that are often hot, uncomfortable, and noisy, Environment includes exposure to extreme cold while working in walk-in refrigerators and freezers for extended periods of time to complete assigned duties. Will work with other cooks, food service workers, and supervisors, is exposed to steam, cooking orders, and noise from equipment and conversation. Is subject to hazards of cuts, bruises, strains, spurns commas and falls in kitchen environment. Use strong cleaning and sanitizing solutions which may frequently be skin and respiratory irritants. Will perform work in patient care settings where there may be exposure to contagious diseases. May have contact with patients who demonstrate verbally and or physically aggressive behaviors. Is required to wear proper hair covering and clean uniforms disposable gloves when handling food for service and proper protective equipment when completing cleaning activities.
