Job Description


Under the general direction of the Store Supervisor, the journeyman meat cutter is an expert in the meat department at the General Store while continuously aligning daily functions to reflect Kinross' values.

Essential Functions

  • Cuts, trims, and bones carcass sections or prime cuts to reduce to cooking cuts such as roasts, steaks, chops, stew cubes, and grinding meat.
  • Process all boxed meats according to accepted meat processing guidelines and in accordance with all Nevada health laws. Prepare special orders for customers.
  • Cuts, wraps, and weighs meat for individual servings and places meat on trays in display counter or for customers' special order.
  • Cleans and cuts fish and poultry.
  • Shapes, laces, and ties meat cuts by hand to form roasts.
  • Cook meat to reduce spoilage and prepare school kids lunches.
  • Estimates requirements and requisitions to place regular and special meat orders weekly by telephone, through personal contact, or with an order book.
  • Unloads meat from delivery truck and stores meat in refrigerator. Cleans work area.
  • Face and maintain deli and cheese coolers, removing damaged, spiled, or out-of-date item, and pricing or re-pricing merchandise. Ensure to follow FIFO (first in, first out) rule to ensure the proper rotation of all items to prevent spoilage. Maintain related spoilage report.
  • Orders all product needed to run department.
  • Helps train and develop apprentice meat cutters to achieve highest level of progression.
  • Helps develop other department personnel to perform duties listed above.
  • Provide support for the 9 & Dine restaurant.
  • Compliance with all company policies and procedures including, but not limited to safety, environmental, confidentiality and code of conduct.
  • Meets or exceeds established performance expectations set by management.
  • Consistently exercises discretion and judgment in job performance.
  • Works without risk or harm to self and others.
  • Punctuality and regular attendance required.
  • Performs other related functions as assigned by supervisors and leads.
Qualifications and Skill Requirements

  • Is familiar with and can apply proper retail mark-up procedures.
  • Must have basic knowledge of seafood.
  • Familiarity with retail aspects of meat production, such as smoking meat and sausage making.
4. 3-5 years' experience in breaking and boning beef, pork, lamb, and poultry.

  • Possesses effective communication and customer service skills.
  • Working knowledge and skill with P.C. utilizing word processing, spreadsheet, database, and presentation software.
  • Strong verbal, written, analytical and persuasive skills and the ability to interact effectively with all levels of employees and management.
  • Ability to work independently and as a member of the management team.
  • Demonstrates strong administrative, organizational, and technical writing skills.
  • Must be 18 years old and presently authorized to work in the United States on a full-time basis.
  • Requires valid driver's license.

Works under the direct supervision of the General Store/Golf Course Supervisor.
