Head Sushi Chef Responsibilities


  • Work as a team with the entire restaurant staff
  • Oversee and manage all sushi chefs and operations concerning sushi, ensuring a clean and organized sushi program.
  • Reviewing staffing levels to meet service, operational, and financial objectives.
  • Hiring, training, scheduling, evaluation of the Sushi team
  • Performing administrative tasks, taking inventory of food and equipment supplies, and doing purchase orders
  • Setting and monitoring performance standards for the sushi team
  • Collaborate with executive management to create a successful and efficient operation
  • Always create a great guest experience
  • Adhere and direct the team to follow standard recipes to uphold quality and consistency
  • Assist in the development of new menu items and specials
  • Help manage kitchen daily operations, ordering, recipe adherence and labor
  • Help monitor food freshness and quality


Head Sushi Chef Qualifications


  • 4+ years experience as an Head Sushi Chef
  • 8+ experience in hi-volume / fine dining kitchens
  • Passion for food and cooking
  • Ability and passion for leading a team
  • Knowledge of labor and food cost principles
  • Hands-on approach to running a sushi team
  • Must have experience in high-end Asian cuisine / Sushi
  • Ability to step into a new brand and grow with the company
