Description


The Head Coffee Roaster manages the roasting program for Casa Brasil and additional brands under the Casa Brasil Inc. umbrella. They ensure that all coffee is roasted efficiently and to spec and delivered on time and as needed to the production and packaging teams. They ensure that all roasting equipment and green coffee handling equipment is properly and regularly maintained and cleaned. The Head Roaster works directly with the Director of Coffee (DOC) and the Production Manager to ensure that all green and roasted coffees are properly accounted for, labeled, stored, maintained, and evaluated on a regular basis, identifying and correcting any issues that may arise. 


Responsibilities 


Coffee Roasting


  • Work closely with the production manager to review production needs and generate daily and weekly roasting plans
  • Work closely with the DOC to create and implement roast profiles, curves, and overall roasting strategies
  • Ensure all coffee is roasted to spec and recorded in the roast log and cropster programs respectively and that samples are collected from each batch
  • Manage roasted coffee inventory and pars, record daily overages, and populate the day’s roast log
  • Ensure routine roaster maintenance and cleaning are performed regularly and correctly and that any maintenance problems are quickly addressed as they arise


Green Coffee Management


  • Ensure that green coffee warehouse is kept clean and organized at all times
  • Ensure all green lots are properly received, stored, organized and labeled 
  • Perform regular green coffee inventory and review with DOC


Quality Control


  • Cup production roasts regularly with DOC and other team members to evaluate roast curves and cup quality, identify issues, and implement solutions
  • Perform arrival QC tasks for all incoming green lots including density,moisture content, green grading, screen size, sample roasting and arrival cupping
  • Perform weekly and monthly QC tasks including density, moisture content, and roast level evaluation
  • Record all QC data in the appropriate documents and review with DOC on a regular basis


Requirements


  • Enjoy working in a fast-paced and constantly evolving environment

  • Have the ability to create and implement systems for efficiency and consistency
  • Be highly professional and organized with excellent verbal and written communication skills
  • Have 3+ years of coffee roasting experience
  • Have a strong understanding of coffee manufacturing concepts and technologies including roasting and packaging systems 
  • Have a strong understanding of food safety concepts and best practices (knowledge of GMP, HACCP and SQF a plus) 
  • Have the ability to effectively manage product inventory and COGS
