Job Title: Sous ChefJob Summary:
The Food and Beverage Organization at Vail Resorts is seeking a highly skilled and experienced Sous Chef to join our team. As a key member of our culinary team, you will be responsible for the overall quality of food service at our mountain dining restaurants, providing guests with an exceptional dining experience.
Key Responsibilities:
- Supervise kitchen staff and lead the team operationally and administratively.
- Ensure adherence to food safety requirements and employee safety programs.
- Lead daily product quality and portion control standards.
- Manage all stations during service times, troubleshoot, assist guests and staff.
- Take responsibility for shifts in the absence of employees.
- Monitor the cleanliness of all kitchens, stations, and equipment, following daily and weekly cleaning outlines.
- Build staff schedules to budgeted labor, monitor and approve time-off requests, resolve payroll exceptions, and approve payroll.
- Monitor staff breaks and lunches, adhering to local labor regulations.
- Manage location ordering, receiving, stocking, and rotation of product, cost transfers, product waste, and inventory control of all food, beverages, supplies, etc.
- Conduct employee development and performance reviews.
- Lead by a professional example, be approachable, and create a fun and positive teamwork environment.
Requirements:
- Minimum 3 years' experience in a high-volume kitchen facility.
- Minimum 3 years of direct management/supervisory experience.
- Able to perform in a fast-paced guest-facing environment.
- Strong interpersonal communication skills.
- Knowledge of inventory control, waste management, and portion control systems.
- Advanced culinary knowledge and a passion for people.
- Purchasing systems, MS Office Suite, POS experience.
- Serve Safe Certification or equivalent State Issues Food Handler Card.
- Ability to stand for long periods of time and lift 40 lbs.
