Meat Cutter Job Description

The Meat Cutter plays a vital role in ensuring the quality and quantity of meat products at Golden Corral. This position requires attention to detail, strong communication skills, and the ability to work efficiently in a fast-paced environment.

Key Responsibilities:

  • Cut meat according to product specifications and time standards.
  • Complete use and following of the buffet production system to ensure quality and shelf life compliance.
  • Rotate cut and boxed meat to ensure freshness.
  • Stock and arrange the Meat Cooler in accordance with approved food safety guidelines.

Cleanliness and Sanitation:

  • Sanitize all surfaces between production of chicken and any other meat to eliminate cross-contamination.
  • Recognize and remove bad meat based on appearance, smell, and texture.
  • Clean and sanitize the meat room according to cleanliness, service, and quality standards.
  • Follow local health department laws and regulations.

Operational Excellence:

  • Use administration forms to maintain an inventory of all meat products and determine production levels.
  • Notify the Manager of any discrepancies in product or equipment.
  • Perform opening and closing administrative procedures.
  • Properly maintain equipment according to the Equipment Maintenance manual.
  • Perform duty roster tasks.
