Artisan Baker

Route 66 Casino Hotel is seeking a skilled Artisan Baker to join our culinary team. As an Artisan Baker, you will be responsible for producing high-quality artisan bread and bread products.

• Prepare food products to precise specifications.
• Maintain a clean and organized workspace, adhering to health and safety standards.
• Accurately measure and scale ingredients, ensuring consistency and quality.
• Collaborate with the Pastry Chef to ensure smooth production and effective communication.
• Prepare pans for baking, load and unload ovens, and fill racks for transportation and storage.
• Properly label and store back-up products, minimizing waste and maintaining controls.
• Communicate production problems to the supervisor and provide assistance to the Pastry Chef as needed.
• Meet department productivity standards and maintain a positive attitude towards customers and coworkers.

• High School Diploma or equivalent preferred.
• Minimum of two years of relevant work experience as a baker in a fast-paced and high-volume bakery or restaurant.
• Knowledge of levain and starters, with the ability to mix, shape, and bake artisan breads, including baguettes, ciabatta, wheat, ryes, and other specialty breads.
• Certification from a culinary school is a plus.
