Job Summary

Unidine is seeking an Executive Chef to lead our culinary team in Portland, ME. As a key member of our management team, you will be responsible for overseeing daily kitchen operations, recruiting and training staff, and ensuring the delivery of high-quality food products.

Key Responsibilities
  • Lead daily culinary production, ensuring compliance with safety and sanitation standards.
  • Develop and implement menu plans, including menu development, food presentation, and cost controls.
  • Supervise and coordinate activities of cooks and workers engaged in food preparation.
  • Monitor and control food costs, labor costs, and other expenses.
  • Ensure compliance with federal, state, and local health and safety regulations.
Requirements
  • A.S. or equivalent experience in culinary arts or related field.
  • Minimum 5 years of progressive culinary/kitchen management experience.
  • Extensive catering experience and high-volume food service operations experience.
  • Comprehensive knowledge of food and catering trends, including quality, production, sanitation, food cost controls, and presentation.
