Job Overview

Kappo Masa, a renowned Michelin Star restaurant, seeks an accomplished Sushi Chef to lead our culinary team. As a key member, you will be responsible for delivering exceptional sushi experiences to our discerning guests.

Key Responsibilities:
  • Culinary Expertise: Demonstrating advanced skills in knife handling, cooking methods, and kitchen equipment usage.
  • Sushi Preparation: Expertly cutting, slicing, and filleting fish, adhering to high-quality standards.
  • Omakase Style: Preparing, serving, and delivering omakase dishes with precision and flair.
  • Quality Control: Inspecting ingredients and reporting sub-standard quality to the Chef de Cuisine.
  • Cleanliness and Safety: Maintaining New York State Department of Health guidelines and regulations.
Customer Service:
  • Steps of Service: Implementing all aspects of Kappo Masa's steps of service.
  • Guest Experience: Providing friendly, courteous, and professional service, accommodating guest requests and modifications.
  • Allergies and Cross-Contamination: Being mindful of allergies and cross-contamination protocols.
Training and Development:
  • New Hire Training: Following training guidelines and enforcing Company protocols.
  • Cross-Training: Willingness to assist coworkers and cross-train at multiple stations.
Requirements:
  • Culinary Experience: 3+ years of experience in the culinary industry.
  • Food Handler's Certificate: Preferred, but not required.
  • Knowledge and Skills: Familiarity with New York Department of Health standards, NY State and Federal Labor Laws, and hospitality industry best practices.

Salary Estimate: $55,000 - $65,000 per year, depending on experience.
