Executive Chef Job Description

Haywire, a prominent restaurant in La Cantera, is seeking an experienced Executive Chef to spearhead its culinary team. With a focus on delivering exceptional dining experiences, the ideal candidate will possess a deep understanding of sophisticated cowboy cuisine and a passion for creating memorable events.

Key Responsibilities:

  • Partner with General Manager and Sales Manager to craft unique menus that elevate special occasions
  • Mentor line cooks and prep staff to ensure expertise in recipe execution, ingredient knowledge, and presentation
  • Conduct regular kitchen audits to guarantee impeccable menu items leave the kitchen each shift

Culinary Leadership:

  • Prepare comprehensive data for budget projections, including food, labor, and other kitchen-related expenses
  • Implement strategies to manage food costs, portion control, and adjust menu pricing as needed
  • Present culinary updates, needs, and issues at manager meetings, ensuring alignment with the team and restaurant goals
  • Maintain the highest standards of cleanliness and preventive maintenance for all kitchen equipment and fixtures

Talent Development:

  • Hire, train, and retain top talent in the industry
  • Equip team members with necessary knowledge, tools, and resources for success
  • Oversee timely and accurate scheduling of culinary staff to ensure proper coverage on every shift
  • Foster a culture that attracts new team members and allows them to excel in their roles
  • Provide fair, consistent coaching and feedback to maintain high standards

Quality Assurance:

  • Evaluate ingredients regularly to guarantee consistently high quality
  • Appreciate and understand the importance of farm-to-fork commitments and sustainability
  • Approve product requisitions and purchases to ensure alignment with Haywire's culinary standards
  • Accountable for developing, implementing, and using Haywire's standard recipes and techniques

Requirements:

  • A minimum of 3-4 years of experience in high-volume, casual-fine dining restaurants
  • A strong background in Texas-inspired cuisine, wine, and spirits
  • Demonstrated ability to thrive in fast-paced environments and drive top-line restaurant performance
  • Competitive salary: $80,000 - $100,000 per year, depending on experience
