Job Title: Sous Chef

Gecko Hospitality is seeking a seasoned leader to join our culinary team as a Sous Chef. As a key member of our kitchen team, you will be responsible for overseeing the smoking process, coordinating with your team to ensure timely preparation of smoked meats and other dishes, and maintaining a clean and organized prep area.

Key Responsibilities:
  • Oversee the smoking process for various types of meat, including brisket, ribs, and pulled pork
  • Coordinate with your team to ensure timely preparation of smoked meats and other dishes
  • Maintain a clean and organized prep area, adhering to high standards of sanitation and organization
  • Ensure kitchen staff adhere to set standards, procedures, and sanitation requirements
  • Utilize kitchen knives and equipment, such as ovens, steamers, smokers, and warmers, for food preparation
  • Manage kitchen inventory, verifying the freshness and quality of supplies
  • Monitor proper food temperatures during cooking and ensure proper storage afterward
  • Keep your workstation and kitchen equipment clean, organized, and sanitized
Requirements:
  • Minimum of 2 years in a top-tier role as a Sous Chef, Kitchen Manager, and/or Pit Master in a high-volume restaurant setting
  • Expert understanding of barbecue techniques, smoking methods, and flavor profiles
  • Excellent communication and interpersonal skills
  • Ability to handle the heat of a fast-paced environment while maintaining high-quality standards
  • Keen understanding of food safety practices and regulations
  • Strong leadership abilities, a team player, with excellent communication skills
  • Physically able to stand, sit, squat, or walk for extended periods
  • Ability to grasp, reach overhead, push, lift, and carry up to 50 lbs
  • Culinary school background is a plus
