Description:

As a Garde Manger at the Milwaukee Repertory Theater, you will be responsible for the safe, timely production and service of cold food preparation and some hot food preparation, including salads, sandwiches, side items, dressings, and garnishes. The Garde Manger is accountable for the quality and freshness of food products in preparation for service as outlined by the Kitchen Manager.

Key Responsibilities:

  • Ensure all product is prepared properly and in a timely manner
  • Maintain a clean work station through the course of your shift
  • Complete all daily tasks assigned
  • Comply with health and sanitation standards
  • Train in other areas of the kitchen as needed
  • Understand recipes and prep in other areas of the kitchen
  • Organize, put away, and rotate orders as needed
  • Ensure all food is prepared, plated, and served properly
  • Ensure the station is properly stocked for each service, prep lists, and cleaning lists are followed
  • Work as part of a team and uphold the standards of the organization at all times

Requirements:

  • Basic knife skills
  • Knowledge of sauces, dressing, and vinaigrette preparation preferred
  • Knowledge of basic cooking techniques, weights, and measurements
  • Must be able to read and follow recipes
  • Knowledge of proper food sanitation practices
  • Must have strong communication skills
  • Must be able to work well under pressure
  • Strong ability to multi-task
  • At least one year of casual, upscale, or comparable line experience
  • Previous experience working a high-volume Garde Manger station in a casual to high-end setting
  • General knowledge and how to operate all kitchen equipment
  • Comfortable taking direction and feedback
  • Work positively with all staff members
  • Must be able to work independently and as part of a team

Physical Requirements:

  • Ability to lift between 20lbs and 50lbs
  • Ability to stand for a minimum of 4 hours

Schedule:

  • Must be available to work nights and weekends

Additional Requirements:

  • Ability to pass a background check in compliance with Federal and/or State laws

Salary: $15.00
