Job Summary:

The Executive Chef at Brookdale Greenwood Village is responsible for overseeing the daily operations of the kitchen and ensuring the highest quality food products. Direct supervision and training of kitchen personnel are essential for all related culinary activities.

Key Responsibilities:

  • Oversee breakfast, lunch, and dinner for quality assurance of meal presentation and portion control.
  • Select recipes, prepare, and coordinate all meals, as well as coordinate prep for the following day's menu.
  • Create new dishes and develop recipes, standardizing recipes to ensure consistent quality, establish presentation techniques, and quality standards, and plan, modify, and develop menus.
  • Perform pre-meal meetings with food servers to review the daily menu details.
  • Ensure an adequate number of culinary associates are available for each shift and cover absences as needed.
  • Estimate food consumption and requisition food purchases, monitor and maintain inventory, and assist in maintaining budget compliance for daily food costs.
  • Apply loss prevention procedures, assist in hiring, training, scheduling, disciplining, and terminating associates, and provide training for all kitchen staff.
  • Coordinate and execute special events.
  • Maintain kitchen cleanliness and food preparation according to state and local health department code requirements, ensure all kitchen equipment is in working order and kept clean at all times, oversee the proper inventory, storage, and use of cleaning chemicals, and minimize waste by utilizing food storage and recycling techniques.

Qualifications:

  • Associate's degree (A.A.) or equivalent from a two-year college or technical school, or two to four years of related experience and/or training, or an equivalent combination of education and experience.
  • ServSafe certification, and local, state, and/or county required food handling/sanitation licenses and/or certificates.

Physical Demands and Working Conditions:

  • Standing, walking, sitting, occasional weekend, evening, or night work, use of hands and fingers, reaching, and possible exposure to communicable diseases and infections.
