Sushi-San is a leading sushi restaurant in Chicago, renowned for its high-quality sushi and binchotan roasted meats. We're passionate about delivering exceptional dining experiences, and we're looking for a talented Sous Chef to join our team.
Job Summary:
We're seeking a seasoned Sous Chef with 2-3 years of experience in a high-volume full-service restaurant. As a key member of our kitchen team, you'll be responsible for leading BOH shifts, ensuring efficient operations, and supervising kitchen staff. You'll also partner with our GM and management team to interview, hire, and develop BOH employees.
Responsibilities:
• Run BOH shifts and ensure effective operations, including food prep, cooking, and inventory management.
• Lead pre-shift meetings and participate in line, temp, and cooler checks to ensure quality and consistency.
• Partner with GM and management team to review and maintain recipe books and ensure accurate food production and timing.
• Purchase and order food products and supplies, and assist with tracking and controlling food costs.
• Ensure effective communication between FOH and BOH teams, and model teamwork across all teams.
• Use tact and good judgment when dealing with guest, vendor, and employee challenges.
Qualifications:
• 2-3 years of sous chef experience in a full-service restaurant.
• Ability to lead and manage kitchen staff, and work effectively in a fast-paced environment.
