Culinary Director

Hotel Clermont & Tiny Lou's is seeking a visionary Executive Chef to lead our culinary team at Tiny Lou's. As a historic landmark known for our vibrant atmosphere and exceptional dining experiences, we are looking for a creative and passionate chef to elevate our culinary offerings.
The ideal candidate will bring expertise in menu development, food quality, and team management. This role offers the opportunity to showcase your culinary skills in a dynamic and fast-paced environment.
Key Responsibilities:
- Evaluate local tastes and develop recipes that reflect and enhance local character and interest.
- Meet and exceed each guest's highest expectations for delivery, presentation, and taste.
- Cultivate a loyal following of regulars.
- Develop and maintain relationships with regional suppliers and maximize the use of regional ingredients.
- Familiarize yourself with regionally available ingredients, varieties, and seasons.
- Develop and maintain relationships with regional and national chefs.
- Develop and manage a team of kitchen staff.
- Develop and oversee processes for kitchen service, organization, cleanliness, and maintenance.
- Collaborate with and supervise kitchen staff regarding menu development, kitchen operations, and maintenance.
- Oversee all hiring and training of kitchen staff.
- Approve hiring and termination of all employees.
- Write weekly kitchen schedules to ensure sufficient staffing for each meal period.
- Generate documents for all HR actions for the kitchen team and deliver completed documents to HR.
- Administer all kitchen management and employee reviews.
- Monitor and evaluate food, labor, and operating expenses.
- Meet with vendors to purchase new items and explore the best pricing.
- Constantly seek improvement in self, staff, and restaurant.
- Read guest surveys and adjust accordingly as issues arise.
- Assist the Events Department with winning business, providing service, and driving revenue.
- Work closely with the Sales and Marketing team to market the restaurant brand through various media channels.
- Stay current and comfortable with utilizing social media platforms to promote and benefit the property.
Qualifications:
- Advanced knowledge of the food and beverage industry.
- Demonstrated exceptional mastery of recipes, techniques, and ingredients.
- Previous press and media exposure experience is a plus.
- Competent with Windows-based computers and Microsoft Office and familiar with industry-standard software.
- Must pass a background check.
- Hospitality experience preferred.
- Must be eligible to work in the USA.
