Key Responsibilities:

  • Ingredient Preparation: Prepare and portion ingredients according to recipes and specifications, including washing, chopping, slicing, and dicing fruits, vegetables, meats, and seafood.

  • Sauce and Marinade Preparation: Prepare sauces, marinades, dressings, and other flavor-enhancing components following established recipes, ensuring consistency and quality in every batch.

  • Stock Rotation: Rotate and organize stock items in the refrigerator, freezer, and dry storage areas to maintain freshness and prevent waste, adhering to FIFO (first in, first out) principles.

  • Equipment Maintenance: Clean and maintain kitchen equipment, utensils, and workstations, including cutting boards, knives, mixers, and food processors, to ensure safety and sanitation standards are met.

  • Recipe Adherence: Follow standardized recipes and portion sizes accurately to maintain consistency in flavor, texture, and presentation across all menu items.

  • Food Preparation: Prepare and execute menu items according to recipes and specifications, ensuring consistency and quality in every dish served.

  • Station Management: Manage a specific station on the line, such as grill, sauté, or fry, and coordinate with other line cooks to ensure smooth and efficient service during peak hours.

  • Cooking Techniques: Utilize a variety of cooking techniques, including grilling, frying, sautéing, and braising, to achieve the desired flavor and texture profiles for each dish.

  • Ingredient Handling: Properly handle, store, and rotate ingredients to maintain freshness and prevent waste, adhering to food safety and sanitation standards at all times.

  • Plating and Presentation: Plate dishes according to established standards for portion size, arrangement, and presentation, paying careful attention to detail to create visually appealing and appetizing presentations.

  • Quality Control: Conduct regular quality checks on food items to ensure they meet our standards for taste, texture, and appearance, making adjustments as needed to achieve perfection.

  • Communication: Communicate effectively with other kitchen staff and front-of-house team members to coordinate orders, prioritize tasks, and maintain a smooth flow of service.

  • Cleanliness and Organization: Maintain cleanliness and organization in your workstation and the kitchen as a whole, including regular cleaning of equipment, utensils, and work surfaces.

 

Qualifications:

  • Previous experience as a line cook or similar role in a high-end restaurant or culinary establishment.

  • Strong knowledge of Southern cuisine and cooking techniques.

  • Proficiency in executing a variety of cooking methods with precision and consistency.

  • Ability to work efficiently in a fast-paced environment, multitasking and prioritizing tasks as needed.

  • Attention to detail and commitment to delivering dishes of exceptional quality.

  • Excellent communication and teamwork skills.

  • Understanding of food safety and sanitation practices.

  • Flexibility to work evenings, weekends, and holidays as required.
