Who We Are


This is not your average taqueria. Born in 2018, White Lodging capitalized on society’s cultural obsession with the undead and its undying love for tacos, giving rise to Zombie Taco. This bold, quick-service restaurant delivers a food truck experience with fresh, high-quality tacos and burritos, located inside our Moxy Hotels . Known for its undead-inspired branding and craveable menu, Zombie Taco has spread from Chicago to Kentucky to Texas-and the journey is far from over.


What You’ll Do


Your Mission: Serve killer tacos, keep the undead fed, and help Zombie Taco take over the world-one tortilla at a time.


As the Kitchen Manager at Zombie Taco, you’ll:


  • Lead the undead-err, your team-to deliver exceptional guest experiences and uphold Zombie Taco’s high standards for food quality, safety, and service.
  • Monitor and respond to guest reviews (including surviving the occasional "brain-eating" critique) to keep customer satisfaction infectious.
  • Drive the kitchen’s operational performance by managing food costs, inventory, and labor while maintaining a profitable and guest-centric environment.
  • Work with the Marketing team to promote Zombie Taco’s unique vibe through social media, events, and community engagement.
  • Train and mentor your team to serve killer cuisine while fostering a fun, creative, and high-energy culture.
  • Keep it fresh by brainstorming new menu ideas and executing seasonal updates to keep our guests craving more.


What You’ll Bring


  • Proven leadership in a fast-paced food service environment, with a flair for creativity and passion for tacos (and maybe the occasional zombie pun).
  • Strong skills in kitchen operations, including scheduling, inventory control, and budgeting.
  • A collaborative attitude with the ability to work with marketing, sales, and operations teams to create a seamless guest experience.
  • Knowledge of health and safety regulations, with the ability to train your team on these standards.
  • A commitment to making Zombie Taco the most talked-about taqueria in town.
